Chocolate Chip Cookie Oreo Brownies



If you have been looking online for brownies over the past few months, you have probably seen some version of these.  I did try to figure out where this started and I think it might have been with The Londoner and this recipe, though I did see it first here at What's Gaby Cooking.  Basically, it is a layer of cookie dough followed by a layer of Oreo cookies topped with a layer of brownie. This is my version using the Ghirardelli chocolate chip cookie recipe as a base and using Robert's Absolute Best Brownies by David Lebovitz, which really are the best brownies I have ever eaten.  I always wonder if these over the top type desserts are really as good as they sound like they will be - at least until I try them.  Sometimes they are and sometimes they are not.  But, these are really delicious.  They are truly decadent and sure to get some attention wherever you take them... if you don't keep them all for yourself.

Soft Sugar Cookies for St. Patrick's Day





I have been wanting to try this recipe for a while.  I have seen it on numerous blogs all stating that these cookies are supposed to taste like those big frosted sugar cookies you see at the grocery store.  I know, cookies from the store are supposed to be bad, but how many people out there have never tried one of these?  For me, when my kids were younger, they were always the thing I would pick up from the store when my kids were supposed to take refreshments to something, but I didn't have time to bake.  After all, the kids seemed to love them, and if I were lucky there would be one left over for me.  So, when I was looking for something to make for St. Patrick's Day, I knew these would be perfect - after all, they are supposed to have colored icing and sprinkles, right.  These cookies do really taste very much like the store bought version, but they are better - more buttery and maybe a little less sweet.  I will warn you that having them around can be dangerous, so you might want to make them when you have plenty of people around to eat them.  My husband is used to me wanting to get my baked treats out of the house so I won't eat them, so he has offered to take them to work, but I haven't said yes yet.  I keep thinking that I might just want one more!

Snickerdoodles


Snickerdoodles are always a Christmas favorite, and since my Calculus class just happened to be working on a cookie recipe project (really, you shouldn't ask unless you are into that sort of thing) right before winter/Christmas break, and since they also don't contain the nuts or chocolate that so many students are allergic to, they made the perfect cookie for class.  I couldn't find the old recipe I used to make so I use this one from Martha Stewart.  This one of those rare events where I actually did follow the recipe exactly, so I won't re-post it.
